Juicy chicken thighs simmered in a creamy tomato basil spinach sauce, ready in 35 minutes and perfect for weeknight dinners.
Ingredients
6 chicken thighs, bone-in skin-on
2 tbsp olive oil
3 garlic cloves, minced
1 can diced tomatoes (14 oz)
1 cup heavy cream
2 cups fresh spinach
1/2 cup grated Parmesan cheese
1/4 cup fresh basil leaves, chopped
1 tsp paprika
1 tsp garlic powder
Salt and black pepper, to taste
Instructions
1. Pat chicken thighs dry and season with paprika, garlic powder, salt, and pepper.
2. Heat olive oil in a skillet and sear chicken thighs skin-side down until golden and crispy. Flip and cook the other side, then remove and set aside.
3. In the same skillet, sauté garlic until fragrant. Stir in diced tomatoes and heavy cream, and let simmer until slightly thickened.
4. Add spinach, Parmesan cheese, and basil, stirring until spinach wilts and sauce is creamy.
5. Return chicken thighs to the skillet and simmer for 10 minutes, spooning sauce over chicken, until internal temperature reaches 165°F.
6. Let rest for 5 minutes and serve with your favorite sides.
Notes
Serve with pasta, mashed potatoes, or crusty bread to soak up the sauce.
Store leftovers in an airtight container for up to 3 days.
Reheat gently with a splash of cream to restore texture.
