Description

Dump-and-Bake Chicken Tzatziki Casserole  a light and creamy Mediterranean-inspired bake featuring tender chicken, rice, Greek yogurt, cucumber, and herbs, all topped with melty cheese for an effortless, flavor-packed dinner.


Ingredients

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup uncooked long-grain white rice

2 cups chicken broth

1 cup plain Greek yogurt

1 cup cucumber, grated and squeezed dry

2 garlic cloves, minced

1 tbsp olive oil

1 tbsp lemon juice

1 tsp dried dill (or 1 tbsp fresh)

1/2 tsp oregano

1/2 tsp salt

1/4 tsp black pepper

1/2 cup crumbled feta cheese

1/2 cup shredded mozzarella cheese

1/4 cup chopped fresh parsley (for garnish)


Instructions

1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.

2. In the baking dish, combine uncooked rice, chicken broth, olive oil, lemon juice, garlic, dill, oregano, salt, and pepper.

3. Add the raw chicken pieces and stir everything together to evenly distribute.

4. Cover tightly with foil and bake for 35–40 minutes, until rice is tender and chicken is cooked through.

5. Remove from oven and carefully stir in Greek yogurt, grated cucumber, and feta cheese.

6. Sprinkle shredded mozzarella over the top and return to the oven uncovered for 10 minutes, until the cheese is melted and bubbly.

7. Garnish with chopped parsley and serve warm.

Notes

Make it extra zesty with a sprinkle of lemon zest before serving.

Substitute quinoa for rice for a higher-protein version.

Serve with warm pita bread and a side of roasted vegetables for a complete meal.
