Juicy Chicken Zucchini Meatballs packed with flavor, perfect for weeknight dinners or meal prep.
Ingredients
1 lb ground chicken
1 medium zucchini (grated & squeezed)
1 egg
1/2 cup breadcrumbs (or almond flour)
2 garlic cloves (minced)
1/4 cup parsley (chopped)
1 tsp paprika
1 tsp onion powder
1/2 tsp salt
1/2 tsp black pepper
2 tbsp olive oil
Instructions
1. Preheat oven to 400°F (200°C).
2. Grate zucchini and squeeze excess moisture.
3. Mix chicken, zucchini, egg, breadcrumbs, garlic, parsley, and spices.
4. Shape into 1-inch balls and place on lined baking sheet.
5. Brush lightly with olive oil.
6. Bake for 18–20 minutes, flipping halfway.
7. Check internal temperature (165°F).
8. Rest for 5 minutes before serving.
Notes
For gluten-free, use almond flour.
Freeze up to 3 months.
Add chili flakes for spice.
