Description
Hearty, protein-rich, and packed with earthy flavors, these Chickpea and Mushroom Burgers are the ultimate vegan comfort food. Perfect for meal prep, weeknight dinners, or weekend cookouts.
Ingredients
1 can (15 oz) chickpeas, drained and rinsed
2 cups mushrooms, finely chopped
1 small onion, finely diced
2 garlic cloves, minced
1 tbsp olive oil
1 cup breadcrumbs (gluten-free optional)
2 tbsp ground flaxseed + 5 tbsp water (flax egg)
2 tbsp soy sauce or tamari
1 tsp smoked paprika
1 tsp cumin
Salt and pepper to taste
2 tbsp fresh parsley or cilantro (optional)
Instructions
1. Prepare the flax egg by mixing flaxseed with water and set aside to thicken.
2. Heat olive oil in a skillet, then cook mushrooms, onion, and garlic until softened and liquid evaporates.
3. Mash chickpeas in a large bowl, leaving some texture.
4. Add mushroom mixture, flax egg, breadcrumbs, soy sauce, spices, and herbs to the bowl. Mix well until combined.
5. Form into 4–6 burger patties. Add extra breadcrumbs if too wet.
6. Pan-fry patties in a skillet 4–5 minutes per side, or bake at 375°F (190°C) for 20–25 minutes, flipping halfway.
7. Serve on toasted buns with favorite toppings.
Notes
For a smoky twist, add 1 tbsp BBQ sauce to the mixture.
Swap breadcrumbs with oats for a healthier option.
Freeze uncooked patties between parchment layers for easy future meals.
