Description
These Chocolate Chip Avocado Muffins are rich, fudgy, and surprisingly healthy! Made with ripe avocado, honey, cocoa powder, and dark chocolate chips, they’re moist, naturally sweetened, and perfect for breakfast, snack, or dessert.
Ingredients
1 ripe avocado (mashed)
1/3 cup coconut oil (melted) or butter
1/2 cup honey or maple syrup
2 large eggs
1 tsp vanilla extract
1 ½ cups all-purpose flour (or almond flour for gluten-free)
1/3 cup unsweetened cocoa powder
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup dark chocolate chips
Instructions
1. Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
2. In a bowl, whisk mashed avocado, coconut oil, honey, eggs, and vanilla until smooth.
3. In another bowl, combine flour, cocoa powder, baking powder, baking soda, and salt.
4. Add dry ingredients to wet mixture and stir until just combined.
5. Gently fold in the chocolate chips.
6. Fill muffin cups ¾ full and bake for 18–22 minutes, or until a toothpick comes out clean.
7. Let cool for 10 minutes before serving.
Notes
Use almond flour to make these gluten-free.
For extra richness, add a handful of chopped nuts.
Swap dark chocolate chips for white or milk chocolate for variety.
Store in an airtight container for up to 3 days, or freeze for up to 1 month.
