Creamy no-bake chocolate caramel cheesecake bites made with rich cream cheese, silky dark chocolate, and luscious caramel — a perfect dessert without the oven.
Ingredients
2 cups graham cracker crumbs
1/2 cup melted unsalted butter
16 oz full-fat cream cheese (room temperature)
1/2 cup powdered sugar
1 tsp vanilla extract
1/3 cup caramel sauce (plus extra for drizzle)
1/2 cup melted dark chocolate
Optional: sea salt flakes, crushed nuts
Instructions
1. Line a mini muffin tin with paper liners or use a silicone mold.
2. Mix cookie crumbs and butter. Press into molds to form crust. Chill 10 minutes.
3. Beat cream cheese until smooth.
4. Add powdered sugar and vanilla. Mix well.
5. Stir in caramel sauce until fully blended.
6. Spoon mixture over chilled crusts and smooth tops.
7. Drizzle melted chocolate on each bite.
8. Chill for at least 2 hours until firm.
9. Top with extra caramel and sea salt before serving.
Notes
Make ahead and freeze in an airtight container.
Use softened cream cheese to avoid lumps.
For a keto version, use almond flour crust and sugar-free caramel.
