Ingredients
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
1/4 cup brown sugar
1 large egg
1 tsp vanilla extract
1 cup all-purpose flour
1/3 cup unsweetened cocoa powder
1/2 tsp baking soda
1/4 tsp salt
1 cup sweetened shredded coconut
1/2 cup chocolate chips
Instructions
1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
3. Beat in egg and vanilla extract until fully combined.
4. In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt.
5. Gradually mix dry ingredients into the wet mixture until a thick dough forms.
6. Fold in shredded coconut and chocolate chips.
7. Scoop tablespoon-sized portions onto the prepared baking sheet, spacing evenly.
8. Bake for 10–12 minutes until edges are set but centers are still soft.
9. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
For extra chewiness, slightly underbake the cookies.
Use toasted coconut for a deeper coconut flavor.
