Description
Soft, chewy chocolate cookies topped with sweet strawberry frosting and dipped in rich melted chocolate these cookies taste just like chocolate-covered strawberries in every bite.
Ingredients
1 cup all-purpose flour
1/3 cup unsweetened cocoa powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup brown sugar
1 large egg
1 tsp vanilla extract
1 cup semi-sweet chocolate chips
1/2 cup unsalted butter (for frosting), softened
1 1/2 cups powdered sugar
1/3 cup strawberry puree (fresh or frozen strawberries blended smooth)
1/2 tsp vanilla extract
6 oz semi-sweet chocolate (for dipping)
1 tsp coconut oil (optional, for smoother melting)
Instructions
1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
3. In a large bowl, cream butter, granulated sugar, and brown sugar until light and fluffy.
4. Beat in egg and vanilla until combined.
5. Gradually add dry ingredients, mixing until a soft dough forms.
6. Fold in chocolate chips.
7. Scoop 1 1/2 tablespoon portions of dough onto baking sheets, spacing about 2 inches apart.
8. Bake for 9–11 minutes, then let cookies cool completely.
9. For the frosting, beat butter until creamy, then mix in powdered sugar, strawberry puree, and vanilla until smooth.
10. Spread a layer of strawberry frosting over each cooled cookie.
11. Melt chocolate (and coconut oil, if using) in a microwave-safe bowl in 20-second intervals until smooth.
12. Dip half of each frosted cookie into the melted chocolate, then place on parchment to set.
13. Allow chocolate to harden at room temperature or refrigerate for faster setting.
Notes
Use freeze-dried strawberries blended into powder for a stronger strawberry flavor.
Store cookies in an airtight container in the fridge for up to 5 days.
