Ingredients
For the Brownies:
1/2 cup unsalted butter, melted
1/2 cup semi-sweet chocolate chips
2 large eggs
3/4 cup granulated sugar
1/3 cup unsweetened cocoa powder
1/2 cup all-purpose flour
1 tsp vanilla extract
1/4 tsp salt
For the Mousse:
1 cup heavy whipping cream
1/2 cup powdered sugar
3 oz semi-sweet chocolate, melted and cooled
1 tsp vanilla extract
Instructions
1. Preheat oven to 350°F (175°C) and line an 8×8-inch pan with parchment paper.
2. Melt butter and chocolate chips together; cool slightly.
3. Whisk eggs and sugar until pale and fluffy.
4. Stir in vanilla, melted butter and chocolate mixture.
5. Fold in flour, cocoa powder, and salt until just combined.
6. Spread batter evenly in the pan and bake for 20–22 minutes.
7. Cool the brownie layer completely.
8. Whip cream with powdered sugar until soft peaks form.
9. Fold in melted chocolate and vanilla extract.
10. Spread mousse over cooled brownies and chill for 2 hours.
11. Slice and serve chilled.
Notes
Make ahead and refrigerate overnight for easier slicing.
Add a pinch of espresso powder to intensify chocolate flavor.
Store leftovers in an airtight container for up to 5 days.
Freeze for up to 2 months—thaw overnight before serving.
