Description
Luxuriously smooth and rich, this classic chocolate mousse is made with real chocolate and whipped cream for an airy, decadent dessert that melts in your mouth.
Ingredients
6 oz semi-sweet or dark chocolate, chopped
3 tbsp unsalted butter
3 large eggs, separated
1/4 cup granulated sugar
1 cup heavy whipping cream
1 tsp vanilla extract
Pinch of salt
Whipped cream and chocolate shavings for garnish
Instructions
1. In a heatproof bowl, melt the chocolate and butter together over a pot of simmering water, stirring until smooth. Remove from heat and let cool slightly.
2. Whisk in the egg yolks and vanilla extract until combined.
3. In a separate bowl, beat the egg whites with a pinch of salt until soft peaks form.
4. Gradually add sugar while continuing to beat until stiff peaks form.
5. In another bowl, whip the heavy cream until soft peaks form.
6. Gently fold the whipped cream into the chocolate mixture until mostly combined.
7. Carefully fold in the egg whites in two additions, being careful not to deflate the mixture.
8. Spoon or pipe the mousse into serving dishes and refrigerate for at least 2 hours before serving.
9. Top with whipped cream and chocolate shavings just before serving.
Notes
Use high-quality chocolate for the best flavor.
For a coffee twist, add 1 tsp instant espresso powder to the melted chocolate.
This mousse contains raw eggs — use pasteurized eggs if preferred.
