Description
Decadent chocolate raspberry truffles made with rich dark chocolate and a hint of tart raspberry flavor smooth, creamy, and coated in cocoa or chocolate for an elegant, bite-sized indulgence.
Ingredients
8 oz dark or semi-sweet chocolate, finely chopped
1/2 cup heavy cream
2 tbsp unsalted butter
2 tbsp raspberry jam or puree
1/2 tsp vanilla extract
Pinch of salt
For Coating:
Cocoa powder, melted chocolate, or finely chopped nuts
Freeze-dried raspberry powder (optional, for color and tang)
Instructions
1. Place chopped chocolate in a heatproof bowl.
2. In a small saucepan, heat heavy cream and butter over medium heat until just steaming (do not boil).
3. Pour hot cream over chocolate and let sit for 1 minute.
4. Stir gently until smooth and glossy.
5. Add raspberry jam (or puree), vanilla extract, and a pinch of salt. Mix until fully combined.
6. Cover the bowl with plastic wrap and refrigerate for 1–2 hours, or until firm enough to scoop.
7. Using a small spoon or melon baller, scoop portions of ganache and roll into 1-inch balls.
8. Roll truffles in cocoa powder, chopped nuts, or dip in melted chocolate.
9. Refrigerate again for 10–15 minutes to set before serving.
Notes
Use high-quality chocolate for the best texture and flavor.
For a stronger raspberry flavor, add a few drops of raspberry extract.
Store truffles in an airtight container in the refrigerator for up to 1 week — serve slightly chilled or at room temperature.
