Ingredients
8 oz semi-sweet chocolate, finely chopped
1/2 cup heavy cream
1 tsp vanilla extract (optional)
Pinch of salt
Cocoa powder, crushed nuts, or sprinkles for coating
Instructions
1. Place the chopped chocolate in a heatproof bowl.
2. In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer — do not boil.
3. Pour the hot cream over the chocolate and let sit for 2–3 minutes.
4. Stir gently until the chocolate is completely melted and smooth.
5. Add vanilla extract and a pinch of salt; stir to combine.
6. Cover the bowl and refrigerate for about 1–2 hours, or until firm enough to scoop.
7. Scoop small portions of the ganache and roll into balls using your hands.
8. Roll each truffle in your desired coating (cocoa powder, nuts, or sprinkles).
9. Store truffles in an airtight container in the refrigerator until ready to serve.
Notes
For a richer flavor, use high-quality dark chocolate.
You can infuse the cream with coffee, orange zest, or liqueur for added depth.
Truffles can be frozen for up to one month; thaw in the fridge before serving.
