These Christmas Morning Pancakes are light, fluffy, and festive the perfect holiday breakfast to start your day with joy! Infused with vanilla and optional hints of peppermint, chocolate chips, or sprinkles, they’re a magical treat for the whole family.
Ingredients
Dry Ingredients:
1 ½ cups all-purpose flour
2 tbsp granulated sugar
2 tsp baking powder
½ tsp baking soda
¼ tsp salt
Wet Ingredients:
1 cup buttermilk (or milk + 1 tsp vinegar)
1 large egg
2 tbsp melted butter (plus more for cooking)
1 tsp vanilla extract
Festive Add-Ins (optional):
¼ cup mini chocolate chips or white chocolate chips
¼ cup crushed peppermint candy or holiday sprinkles
½ tsp cinnamon or nutmeg (for a cozy flavor twist)

Instructions
1. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
2. In a separate bowl, mix buttermilk, egg, melted butter, and vanilla until smooth.
3. Pour wet ingredients into the dry ingredients and stir gently until just combined — don’t overmix.
4. Fold in chocolate chips, sprinkles, or cinnamon if desired.
5. Heat a nonstick skillet or griddle over medium heat and grease lightly with butter.
6. Pour about ¼ cup batter for each pancake. Cook 2–3 minutes until bubbles form and edges look set.
7. Flip and cook another 1–2 minutes until golden brown.

Notes
