Ingredients

1 ½ cups all-purpose flour

2 tbsp granulated sugar

2 tsp baking powder

½ tsp baking soda

Wet Ingredients:

1 cup buttermilk (or milk + 1 tsp vinegar)

1 large egg

2 tbsp melted butter (plus more for cooking)

1 tsp vanilla extract

Festive Add-Ins (optional):

¼ cup mini chocolate chips or white chocolate chips

¼ cup crushed peppermint candy or holiday sprinkles

½ tsp cinnamon or nutmeg (for a cozy flavor twist)

Toppings (optional):

Whipped cream or butter

Maple syrup or chocolate syrup

Instructions

1. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.

2. In a separate bowl, mix buttermilk, egg, melted butter, and vanilla until smooth.

3. Pour wet ingredients into the dry ingredients and stir gently until just combined — don’t overmix.

4. Fold in chocolate chips, sprinkles, or cinnamon if desired.

5. Heat a nonstick skillet or griddle over medium heat and grease lightly with butter.

6. Pour about ¼ cup batter for each pancake. Cook 2–3 minutes until bubbles form and edges look set.

7. Flip and cook another 1–2 minutes until golden brown.

Notes
