Description

Churro Cookies are a delightful blend of crispy churros and soft cookies, offering a sweet and cinnamon-filled treat perfect for any occasion.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 cup sugar (for coating)
  • 1 tablespoon ground cinnamon (for coating)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter and sugar until light and fluffy, about 2-3 minutes.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Mix the flour, baking powder, ground cinnamon, and salt in another bowl.
  5. Combine the dry mixture with the wet mixture until a thick dough forms.
  6. Mix 1/4 cup sugar with the tablespoon of cinnamon for coating in a small bowl.
  7. Roll spoonfuls of the dough into balls, coat in cinnamon-sugar, and place on the baking sheet.
  8. Bake for 10-12 minutes until lightly golden on the edges.
  9. Allow to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
