- 1 cup sugar
- 2 large eggs

- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon

- 1/4 cup sugar (for coating)
- 1 tablespoon ground cinnamon (for coating)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the softened butter and sugar until light and fluffy, about 2-3 minutes.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Mix the flour, baking powder, ground cinnamon, and salt in another bowl.
- Combine the dry mixture with the wet mixture until a thick dough forms.
- Mix 1/4 cup sugar with the tablespoon of cinnamon for coating in a small bowl.
- Roll spoonfuls of the dough into balls, coat in cinnamon-sugar, and place on the baking sheet.
- Bake for 10-12 minutes until lightly golden on the edges.
- Allow to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
