Ingredients
1 1/2 cups all-purpose flour
2 tbsp granulated sugar
1 tbsp baking powder
1/2 tsp salt
1 tsp ground cinnamon
1 cup milk
2 large eggs
2 tbsp melted butter (plus more for cooking)
1 tsp vanilla extract
1/4 cup granulated sugar (for coating)
1 tsp ground cinnamon (for coating)
Chocolate sauce for serving
Instructions
1. In a large bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.
2. In another bowl, whisk milk, eggs, melted butter, and vanilla until smooth.
3. Combine wet and dry ingredients, stirring until just combined (a few lumps are fine).
4. Preheat a nonstick skillet or griddle over medium heat and lightly butter it.
5. Pour 1/4 cup batter for each pancake and cook until bubbles form on top, then flip and cook until golden brown.
6. Mix sugar and cinnamon for coating in a shallow dish.
7. Brush warm pancakes lightly with melted butter and dip or sprinkle with cinnamon sugar.
8. Serve stacked with warm chocolate sauce for drizzling.
Notes
For extra crispiness, cook pancakes slightly longer on each side.
You can replace chocolate sauce with dulce de leche or caramel for variation.
