Delightful Cinnamon Caramel Apple Pie Enchiladas combine classic apple pie flavors with an easy-to-eat format, drizzled with rich caramel sauce for the perfect comforting dessert.


Ingredients

  • 4 cups peeled and diced apples (Granny Smith or Honeycrisp)
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 2 tablespoons butter
  • 6 flour tortillas
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter
  • 1/2 cup water
  • 1/2 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar
  • 12 tablespoons milk
  • 1/4 teaspoon vanilla

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the apples by melting 2 tablespoons of butter in a saucepan over medium heat. Add the apples and stir to coat.
  3. Sprinkle in the granulated sugar, ground cinnamon, nutmeg, and lemon juice. Cook for about 5-7 minutes until apples soften.
  4. Mix in the cornstarch until dissolved. Cook for an additional minute or two until thickened. Allow to cool slightly.
  5. Take each tortilla and fill it with the apple mixture, rolling them tightly and placing seam-side down in a greased baking dish.
  6. Make the caramel sauce by melting the unsalted butter in the saucepan, then stirring in the brown sugar and water. Bring to a boil for 2-3 minutes.
  7. Add in the cinnamon and vanilla extract. Pour the sauce over the assembled enchiladas.
  8. Bake in the oven for 20-25 minutes until bubbly and golden brown.
  9. Whisk together the powdered sugar, milk, and vanilla extract for the glaze.
  10. Drizzle the glaze over the warm enchiladas before serving.

Notes

Serve warm or at room temperature, optionally with vanilla ice cream or whipped cream. Can be stored in the refrigerator for 3-4 days.
