Description
This Cinnamon Roll Cake is your shortcut to the flavor of cinnamon rolls without the fuss—gooey, moist, and laced with a sweet cinnamon swirl.
Ingredients
2 cups all-purpose flour
1/2 cup granulated sugar
1/2 tsp salt
1 tbsp baking powder
1 cup buttermilk
2 eggs
1/3 cup melted unsalted butter
2 tsp vanilla extract
3/4 cup brown sugar
2 tbsp ground cinnamon
1/4 cup melted unsalted butter (for swirl)
1 cup powdered sugar
2 tbsp milk
1/2 tsp vanilla extract
Instructions
1. Preheat the oven to 350°F (175°C) and grease a 9×13” baking pan.
2. In a large bowl, whisk together flour, sugar, salt, and baking powder.
3. Add buttermilk, eggs, melted butter, and vanilla. Stir until smooth.
4. Pour the batter into the prepared pan and spread evenly.
5. In a separate bowl, mix brown sugar, cinnamon, and melted butter for the swirl.
6. Drop spoonfuls of the cinnamon mixture over the batter and swirl using a knife.
7. Bake for 30–35 minutes until a toothpick inserted comes out clean.
8. Cool the cake for 10–15 minutes before adding icing.
9. For icing, whisk powdered sugar, milk, and vanilla until smooth.
10. Drizzle the icing over the warm cake and serve.
Notes
Do not overmix the batter to keep the texture tender.
To reheat, microwave slices for 10–15 seconds to revive softness.
Store in an airtight container at room temperature for 2 days or refrigerate for 4–5 days.
You can freeze individual slices for up to 2 months.
