Description

Quick and easy no-bake cookies combining peanut butter, oats, and a touch of sweetness, perfect for a delicious snack.


Ingredients

Scale
  • 250 g sugar
  • 60 ml milk
  • 115 g unsalted butter
  • 120 g creamy peanut butter
  • 1 tsp vanilla extract
  • 150 g quick oats
  • Pinch of salt

Instructions

  1. Line a baking sheet with parchment paper.
  2. In a medium saucepan, combine the unsalted butter, sugar, and milk over medium heat.
  3. Stir occasionally as the butter melts.
  4. Once melted and sugar dissolved, bring the mixture to a boil.
  5. Boil for one minute, then remove from heat.
  6. Stir in creamy peanut butter until fully combined.
  7. Add vanilla extract and a pinch of salt, mixing well.
  8. Add quick oats and stir until fully coated.
  9. Scoop dollops onto the prepared parchment paper and flatten slightly.
  10. Allow to set at room temperature for 20 to 30 minutes before serving.

Notes

Store in an airtight container with parchment paper between layers. Can be refrigerated for up to 2 weeks or frozen for up to 3 months.
