Rich fudgy brownies topped with creamy coconut layer for a tropical dessert.
Ingredients
1 cup dark chocolate chips
1/2 cup butter
1 cup sugar
2 eggs
1/2 cup flour
1/4 cup cocoa powder
1 can full-fat coconut milk
1/4 cup cornstarch
1/3 cup sugar
1 cup shredded coconut
Instructions
1. Preheat oven to 350°F (175°C) and line an 8×8 pan.
2. Melt chocolate and butter together.
3. Whisk sugar and eggs until fluffy.
4. Fold in flour and cocoa.
5. Pour into pan and bake 25–30 minutes.
6. Whisk coconut milk, cornstarch, and sugar until thick.
7. Stir in shredded coconut.
8. Spread over cooled brownies.
9. Chill 2 hours before slicing.
Notes
For a stronger coconut flavor, toast the shredded coconut before adding.
Store in the fridge for freshness.
