Description
Tender roasted carrots with coriander, fresh parsley, and crunchy pistachios.
Ingredients
1 lb carrots
2 tbsp olive oil
1 tsp ground coriander
1/2 tsp salt
1/4 tsp black pepper
2 tbsp chopped parsley
1/4 cup toasted pistachios
1 tsp honey or maple syrup (optional)
Instructions
1. Preheat oven to 400°F (200°C).
2. Peel and trim carrots.
3. Toss carrots with oil, coriander, salt, and pepper.
4. Spread on a baking sheet.
5. Roast for 25–30 minutes, flipping halfway.
6. Cool 5 minutes before topping with parsley and pistachios.
Notes
For extra caramelization, drizzle carrots with honey or maple syrup before roasting.
Substitute parsley with cilantro for a brighter flavor.
