Description
A vibrant and creamy Corn Orzo with Salmon dish that combines tender orzo pasta, sweet corn, and perfectly cooked salmon in a light lemon-garlic sauce fresh, hearty, and full of flavor.
Ingredients
2 salmon fillets (about 6 oz each)
1 cup orzo pasta
1 tbsp olive oil
1 tbsp butter
1 cup fresh or frozen corn kernels
2 garlic cloves, minced
1/2 cup chicken or vegetable broth
1/2 cup milk or cream
Juice and zest of 1 lemon
1/4 cup grated Parmesan cheese
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions
1. Cook orzo in salted boiling water until al dente, then drain and set aside.
2. Season salmon with salt and pepper.
3. In a skillet, heat olive oil over medium heat and sear salmon 3–4 minutes per side until golden and cooked through. Remove and set aside.
4. In the same skillet, add butter and garlic; sauté for 30 seconds until fragrant.
5. Add corn and cook for 2 minutes.
6. Stir in broth, milk, lemon juice, and zest. Simmer for 2–3 minutes.
7. Add cooked orzo and Parmesan; stir until creamy.
8. Flake salmon into large pieces and gently fold into the orzo mixture.
9. Garnish with fresh parsley and extra lemon zest before serving.
Notes
Use leftover salmon or canned salmon for a quick version.
Add spinach or peas for extra color and nutrition.
For a dairy-free option, replace butter and milk with olive oil and almond milk.
