Description

  • 2 large eggs (room temperature)
  • 2 tsp vanilla extract

  • 226 grams chocolate chips (semi-sweet)
  • 680 grams full-fat cream cheese (softened)
  • 140 grams granulated sugar
  • 2 tsp vanilla extract
  • 1 tbsp cocoa powder
  • 1/2 tsp salt
  • 140 grams sour cream (room temperature)
  • 3 large eggs (room temperature)
  • 200 grams chocolate chips (semi-sweet)
  • 200 grams heavy cream
  • 2 tbsp candy-coated chocolate pieces

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Prepare the brownie layer by melting bittersweet chocolate and unsalted butter together in a medium saucepan over low heat.
  3. Mix the granulated sugar into the melted chocolate mixture, then add the eggs and vanilla extract, mixing well.
  4. Combine all-purpose flour, cocoa powder, and salt in another bowl.
  5. Fold the dry ingredients into the chocolate batter without over-stirring, then fold in 226 grams of chocolate chips.
  6. Pour the brownie batter into a greased 9-inch springform pan and bake for 20-25 minutes.
  7. Cool the brownie layer completely in the pan.
  8. Prepare the cheesecake filling by beating the softened cream cheese and 140 grams of sugar until smooth.
  9. Add vanilla extract, cocoa powder, salt, and sour cream, mixing until creamy.
  10. Add the eggs one at a time, mixing well after each, then fold in 200 grams of chocolate chips.
  11. Pour the cheesecake filling over the cooled brownie layer in the springform pan.
  12. Bake for 60-70 minutes until set with a slight jiggle in the center.
  13. Cool gradually in the oven with the door ajar for about an hour.
  14. Chill in the fridge for at least 4 hours or overnight.
  15. Prepare the chocolate ganache by heating heavy cream and mixing in chocolate chips until smooth.
  16. Add the ganache over the cooled cheesecake and sprinkle with candy-coated chocolate pieces.
  17. Serve chilled, optionally with whipped cream or vanilla ice cream.

Notes

Use room temperature ingredients for smoother mixing and avoid overmixing the brownie batter to maintain tenderness.
