Instructions
- Preheat your oven to 325°F (160°C).
- Prepare the brownie layer by melting bittersweet chocolate and unsalted butter together in a medium saucepan over low heat.
- Mix the granulated sugar into the melted chocolate mixture, then add the eggs and vanilla extract, mixing well.
- Combine all-purpose flour, cocoa powder, and salt in another bowl.
- Fold the dry ingredients into the chocolate batter without over-stirring, then fold in 226 grams of chocolate chips.
- Pour the brownie batter into a greased 9-inch springform pan and bake for 20-25 minutes.
- Cool the brownie layer completely in the pan.
- Prepare the cheesecake filling by beating the softened cream cheese and 140 grams of sugar until smooth.
- Add vanilla extract, cocoa powder, salt, and sour cream, mixing until creamy.
- Add the eggs one at a time, mixing well after each, then fold in 200 grams of chocolate chips.
- Pour the cheesecake filling over the cooled brownie layer in the springform pan.
- Bake for 60-70 minutes until set with a slight jiggle in the center.
- Cool gradually in the oven with the door ajar for about an hour.
- Chill in the fridge for at least 4 hours or overnight.
- Prepare the chocolate ganache by heating heavy cream and mixing in chocolate chips until smooth.
- Add the ganache over the cooled cheesecake and sprinkle with candy-coated chocolate pieces.
- Serve chilled, optionally with whipped cream or vanilla ice cream.
