Description
Fluffy, protein-packed French toast made with cottage cheese and ripe bananas perfect for breakfast or brunch.
Ingredients
4 slices whole-grain or white bread
1 ripe banana, mashed
1/2 cup cottage cheese
2 large eggs
1/2 tsp cinnamon
1/4 tsp vanilla extract
Butter or oil, for cooking
Maple syrup, for serving
Instructions
1. Mash banana and mix with cottage cheese, eggs, cinnamon, and vanilla.
2. Heat nonstick skillet or griddle and grease lightly.
3. Dip each bread slice in mixture, coating both sides.
4. Cook 2-3 minutes per side until golden brown.
5. Serve warm with maple syrup.
Notes
Sprinkle chopped nuts or berries for extra flavor.
Use thick bread slices to prevent sogginess.
Can make ahead and keep warm in 200°F oven.
