This Cottage Cheese Blueberry Bake is a wholesome, high-protein breakfast or snack that’s naturally sweetened and incredibly easy to make. It’s creamy, lightly sweet, and bursting with juicy blueberries perfect for a cozy morning or a healthy dessert option.
Ingredients
1 cup cottage cheese (full-fat or low-fat)
2 large eggs
2 tbsp honey or maple syrup (plus more for drizzling)
½ tsp vanilla extract
½ cup rolled oats or oat flour
½ tsp baking powder
Pinch of salt
½ cup fresh or frozen blueberries
Optional: zest of ½ lemon for brightness
Instructions
1. Preheat oven to 375°F (190°C). Lightly grease a small baking dish (about 6×6 inches or similar).
2. In a blender or food processor, combine cottage cheese, eggs, honey, vanilla, oats, baking powder, and salt. Blend until smooth and creamy.
3. Gently fold in blueberries (and lemon zest, if using).
4. Pour the mixture into the prepared dish and bake for 25–30 minutes, until golden around the edges and set in the center.
5. Let rest for 5–10 minutes before serving for the best texture.
6. Top with fresh blueberries, a drizzle of honey, or a spoonful of Greek yogurt.
Notes
Use full-fat cottage cheese for a richer texture.
Frozen blueberries work just as well — no need to thaw.
Add a sprinkle of cinnamon or nutmeg for extra warmth.
Store leftovers in the fridge for up to 3 days or freeze individual portions for meal prep.
