Description

A delightful low-carb bread made with cottage cheese and blueberries, perfect for snacking or breakfast.


Ingredients

  • 3 large eggs
  • 1/2 cup blueberries
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • Sweetener to taste (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix together cottage cheese, eggs, baking powder, and salt until smooth using a blender or hand mixer.
  3. Fold in the blueberries gently to keep them whole.
  4. Form spoonfuls of the mixture into golf ball-sized clouds on the baking sheet.
  5. Bake for 20-25 minutes until golden and set in the center.
  6. Cool slightly before serving warm or at room temperature.
