A fun and tasty way to enjoy a classic Caprese salad in pizza form, perfect for snacks or light meals.


Ingredients

  • 1 cup cottage cheese
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh mozzarella balls, halved
  • 1/4 cup fresh basil, chopped
  • 1 tablespoon olive oil
  • 1 teaspoon balsamic vinegar
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 12 mini pizza crusts

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine the cottage cheese, cherry tomatoes, mozzarella balls, and chopped basil. Add olive oil, balsamic vinegar, garlic powder, salt, and black pepper. Stir until well incorporated.
  3. Arrange mini pizza crusts on a baking sheet and fill each crust with the cottage cheese mixture, distributing evenly.
  4. Bake in the preheated oven for 15-20 minutes, until crusts are golden and cheese melts.

Notes

Best served warm. Store leftover cups in an airtight container in the refrigerator for up to 3 days.
