Description
A soft, high-protein, and low-carb flatbread made with cottage cheese and eggs perfect for wraps, sandwiches, or as a keto-friendly pizza base.
Ingredients
1 cup cottage cheese
2 large eggs
2 tbsp almond flour
1/2 tsp baking powder
1/4 tsp salt
1/4 tsp garlic powder (optional)
Butter or oil for greasing (optional)
Instructions
1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
2. In a blender or food processor, combine cottage cheese, eggs, almond flour, baking powder, salt, and garlic powder (if using).
3. Blend until smooth and creamy.
4. Pour the mixture onto the prepared baking sheet and spread evenly into a thin rectangle or circle.
5. Bake for 20–25 minutes or until lightly golden and set.
6. Allow to cool slightly before peeling off the parchment.
7. Use as a flatbread, wrap, or pizza crust — enjoy warm or at room temperature.
Notes
For a crispier texture, bake a few minutes longer.
You can add herbs or shredded cheese to the batter for extra flavor.
Store leftovers in the fridge for up to 3 days and reheat in a skillet or toaster oven.
