Description

Ingredients

3 large eggs

¼ cup cottage cheese (full-fat or low-fat)

1 tbsp milk or water (for fluffiness)

1 tbsp butter or olive oil

Salt and freshly ground black pepper, to taste

1 tbsp chopped chives or parsley (optional)

¼ cup shredded cheese (optional — cheddar, Swiss, or mozzarella)

Optional fillings: sautéed spinach, diced tomatoes, mushrooms, or avocado slices


Instructions

1. In a small bowl, whisk together the eggs, milk, salt, and pepper until frothy.

2. Gently fold in the cottage cheese — don’t overmix. You want some creamy curds to remain visible.

3. Melt butter in a nonstick skillet over medium heat. Swirl to coat evenly.

4. Pour the egg mixture into the pan. Let it cook undisturbed for about 30 seconds, then gently lift the edges with a spatula to let uncooked egg flow underneath.

5. When the top is slightly set but still creamy, sprinkle with shredded cheese or your favorite veggies.

6. Carefully fold the omelet in half. Cook another 30–60 seconds until the center is set and creamy.

7. Slide onto a plate, garnish with herbs, and enjoy warm.

Notes

Use low-fat cottage cheese for a lighter version, or full-fat for extra creaminess.

Add a pinch of chili flakes or paprika for extra flavor.

Pair with whole-grain toast or a side salad for a balanced meal.
