- 1 cup cottage cheese
- 1 cup pumpkin puree
- 1 cup flour
- 1/2 cup sugar
- 1/4 cup brown sugar
- 1/4 cup vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp cloves
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9×9 inch baking pan by greasing it lightly.
- In a large bowl, mix the cottage cheese, pumpkin puree, vegetable oil, eggs, and vanilla extract until the mixture is smooth and creamy.
- In another bowl, whisk together the flour, both sugars, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves. Make sure there are no lumps in the dry ingredients.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Do not overmix. If you would like to add walnuts, gently fold them into the batter at this stage.
- Pour the batter into the prepared pan and spread it evenly.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for a few minutes before transferring it to a wire rack. Once cool, cut it into squares and enjoy!
Notes
For an added touch, serve with whipped cream or a dusting of powdered sugar.
