6 large eggs

1 cup low-fat cottage cheese

1/2 cup crumbled feta cheese

1/4 cup grated Parmesan cheese

1/2 cup milk (or cream for richer texture)

1/3 cup chopped sundried tomatoes (packed in oil, drained)

1/2 cup chopped baby spinach

1/4 cup diced red onion

1 tablespoon olive oil

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon dried oregano

1/4 teaspoon garlic powder

1 tablespoon chopped fresh basil or parsley (optional)


Instructions

1. Preheat oven to 375°F (190°C) and grease a 9-inch pie dish or quiche pan.

2. Heat olive oil in a skillet over medium heat. Add diced onion and cook for 3–4 minutes until softened.

3. Stir in the spinach and cook for another minute until wilted. Remove from heat.

4. In a large mixing bowl, whisk together eggs, cottage cheese, milk, feta, Parmesan, salt, pepper, oregano, and garlic powder.

5. Add the cooked spinach and onion mixture, along with the chopped sundried tomatoes. Stir to combine.

6. Pour the mixture into the prepared dish and smooth the top evenly.

7. Bake for 35–40 minutes, or until the center is set and the top is golden brown.

8. Let cool for 5–10 minutes before slicing.

9. Garnish with chopped basil or parsley before serving.

Notes

Use oil-packed sundried tomatoes for the best flavor — just be sure to drain them well.

You can substitute goat cheese for feta for a creamier texture.

Serve this quiche warm or at room temperature with a side salad for a complete meal.
