Description
A cozy, sweet–savory holiday side dish made with tender roasted sweet potatoes tossed with tart cranberries, warm spices, and a touch of apple for brightness.
Ingredients
3 large sweet potatoes, peeled and cubed
1 cup fresh or frozen cranberries
1 large apple, diced (Honeycrisp or Gala)
2 tbsp olive oil or melted butter
3 tbsp maple syrup
1 tsp cinnamon
1/4 tsp nutmeg
Salt and pepper to taste
Optional: 1/4 cup chopped pecans
Optional: extra maple syrup for drizzling
Instructions
1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment.
2. In a large bowl, toss sweet potatoes, cranberries, and diced apple with olive oil or butter.
3. Add maple syrup, cinnamon, nutmeg, salt, and pepper. Toss to coat evenly.
4. Spread mixture on the baking sheet in a single layer.
5. Roast 25–30 minutes, stirring halfway through, until sweet potatoes are tender.
6. Optional: sprinkle pecans on top during the last 5 minutes of baking.
7. Drizzle with extra maple syrup before serving, if desired.
Notes
For extra caramelization, broil for the last 2 minutes.
You can swap the apple for pears for a softer, sweeter finish.
