Ingredients
4 boneless, skinless chicken breasts
1 cup whole berry cranberry sauce
1/4 cup honey
2 tablespoons soy sauce
1 tablespoon Dijon mustard
2 garlic cloves, minced
1 teaspoon dried thyme
1 tablespoon olive oil
Salt and pepper to taste
Fresh rosemary or parsley for garnish
Instructions
1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
2. Season chicken breasts with salt and pepper and place them in the prepared dish.
3. In a bowl, whisk together cranberry sauce, honey, soy sauce, Dijon mustard, garlic, thyme, and olive oil until smooth.
4. Pour the mixture evenly over the chicken.
5. Bake uncovered for 30–35 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
6. Spoon the sauce from the pan over the chicken before serving.
7. Garnish with fresh rosemary or parsley and serve warm.
Notes
Serve with rice, mashed potatoes, or roasted vegetables to soak up the extra sauce.
Use chicken thighs instead of breasts for a juicier option.
Add a pinch of red pepper flakes for a subtle spicy kick.
