Ingredients

For the Pancakes:

1 ½ cups all-purpose flour

2 tbsp granulated sugar

2 tsp baking powder

½ tsp baking soda

¼ tsp salt

1 cup buttermilk (or milk + 1 tsp vinegar)

1 large egg

2 tbsp melted butter (plus more for cooking)

1 tsp vanilla extract

Zest of 1 large orange

¾ cup fresh or frozen cranberries (halved)

Optional Orange Syrup or Glaze:

½ cup maple syrup

1 tbsp orange juice

½ tsp orange zest


Instructions

1. In a medium bowl, whisk together buttermilk, egg, melted butter, vanilla, and orange zest until smooth.

2. In a large bowl, combine flour, sugar, baking powder, baking soda, and salt.

3. Pour wet ingredients into dry ingredients and stir gently until just combined (batter should be slightly lumpy).

4. Fold in halved cranberries — do not overmix.

5. Heat a nonstick skillet or griddle over medium heat; lightly grease with butter.

6. Pour about ¼ cup batter for each pancake and cook 2–3 minutes until bubbles form and edges look set.

7. Flip and cook 1–2 minutes more, until golden and cooked through.

8. For the syrup: mix maple syrup with orange juice and zest, and warm slightly if desired.

9. Stack pancakes, drizzle with orange syrup, and top with cranberries or orange slices before serving.

Notes

Substitute whole wheat flour for half the flour for a fiber boost.

Use dried cranberries if fresh or frozen aren’t available — just soak them briefly in warm water.

These pancakes freeze well; reheat in a toaster or microwave.

Add white chocolate chips for a dessert-style variation.
