Ingredients

- 2 cups all-purpose flour
- 1 cup sugar
- 1 tsp baking powder
- 1/2 tsp salt
- 2 large eggs
- 1/2 cup dried cranberries
- 1/2 cup pistachios, chopped
- 1 tbsp orange zest
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350°F (175°C).
- Line a baking sheet with parchment paper.
- Mix the flour, sugar, baking powder, and salt in a bowl.
- Crack the eggs in a separate bowl, beat lightly.
- Add orange zest and vanilla extract to the eggs, stir until combined.
- Combine the egg mixture into the flour mixture and stir until just combined.
- Fold in the dried cranberries and chopped pistachios.
- Transfer the dough onto the baking sheet and shape it into a log.
- Bake for 25-30 minutes until golden brown.
- Let it cool for 10 minutes on the baking sheet.
- Slice into 1-inch wide pieces.
- Bake the sliced biscotti for an additional 10-15 minutes.
- Cool completely on a wire rack.

Serve with coffee or tea; store in an airtight container for up to two weeks.
