Description

Delightful biscotti packed with cranberries, oranges, and pistachios perfect for coffee or tea time.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 large eggs
  • 1/2 cup dried cranberries
  • 1/2 cup pistachios, chopped
  • 1 tbsp orange zest
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. Mix the flour, sugar, baking powder, and salt in a bowl.
  4. Crack the eggs in a separate bowl, beat lightly.
  5. Add orange zest and vanilla extract to the eggs, stir until combined.
  6. Combine the egg mixture into the flour mixture and stir until just combined.
  7. Fold in the dried cranberries and chopped pistachios.
  8. Transfer the dough onto the baking sheet and shape it into a log.
  9. Bake for 25-30 minutes until golden brown.
  10. Let it cool for 10 minutes on the baking sheet.
  11. Slice into 1-inch wide pieces.
  12. Bake the sliced biscotti for an additional 10-15 minutes.
  13. Cool completely on a wire rack.
