Ingredients
8 oz goat cheese, softened
4 oz cream cheese, softened
1 tbsp honey or maple syrup
1/4 tsp salt
1/4 cup dried cranberries, finely chopped
1/4 cup shelled pistachios, finely chopped
1 tbsp fresh parsley or chives, minced
Crackers or baguette slices for serving
Instructions
1. In a medium bowl, combine goat cheese, cream cheese, honey, and salt until smooth and creamy.
2. In a shallow dish, mix chopped cranberries, pistachios, and herbs.
3. Scoop about 1 tablespoon of the cheese mixture and roll into a small ball.
4. Roll each cheese ball in the cranberry-pistachio mixture until evenly coated.
5. Chill in the refrigerator for at least 30 minutes to firm up before serving.
6. Serve chilled or at room temperature with crackers or baguette slices.
Notes
For a savory version, replace honey with a drizzle of olive oil and add a pinch of black pepper.
