Ingredients

2 large boneless, skinless chicken breasts

½ cup fresh spinach, chopped

¼ cup dried cranberries

23 oz brie cheese, sliced

1 tbsp olive oil

Salt and pepper, to taste

½ tsp garlic powder

½ tsp paprika

Toothpicks or kitchen twine for securing


Instructions

1. Preheat oven to 190°C (375°F).

2. Slice a pocket into the side of each chicken breast.

3. Mix spinach, cranberries, and brie in a small bowl.

4. Stuff each chicken breast pocket with the mixture and secure with toothpicks or twine.

5. Rub chicken with olive oil and season with salt, pepper, garlic powder, and paprika.

6. Heat a skillet over medium-high heat and sear chicken 2–3 minutes per side until golden.

7. Transfer to oven and bake for 20–25 minutes until internal temperature reaches 74°C (165°F).

8. Remove toothpicks/twine and serve warm.

Notes

Let brie come to room temperature for creamier filling.

Pair with roasted vegetables or a fresh salad.

Optionally drizzle with balsamic glaze for extra flavor.
