Description
A comforting slow-cooked dish with tender chicken, creamy broth, and soft gnocchi.
Ingredients
2 lbs chicken thighs or breasts
1 onion, chopped
2 carrots, diced
2 celery stalks, diced
3 garlic cloves, minced
4 cups chicken broth
2 cups spinach
2 cups heavy cream
1 lb gnocchi
1 tbsp Italian seasoning
Salt & pepper to taste
Instructions
1. Place chicken, broth, garlic, onion, carrots, celery, and seasoning in slow cooker.
2. Cook on LOW 6–7 hrs or HIGH 3–4 hrs.
3. Shred chicken in pot.
4. Stir in gnocchi, cream, and spinach.
5. Cook 20–25 mins until gnocchi soft.
6. Let rest 10 mins before serving.
Notes
For a lighter version, use half-and-half instead of cream.
Add chili flakes for spice.
Freeze base without gnocchi, then add gnocchi when reheating.
