- 2 thick slices sourdough bread
- 1 teaspoon olive oil (for toasting)
- 1 cup full-fat cottage cheese
- 1 tablespoon olive oil (for blending)
- Pinch of salt
- Pinch of black pepper
- 1 ripe avocado, sliced
- 6 cherry tomatoes, sliced
- 1/2 small cucumber, thinly sliced
- 1 tablespoon fresh chives, chopped
- Chili flakes (optional)
Instructions
- Begin by toasting the thick slices of sourdough bread until golden and crisp.
- While the bread is toasting, combine the cottage cheese with olive oil, salt, and black pepper in a blender, and blend until smooth.
- Once the bread is toasted, spread the cottage cheese mixture generously on top.
- Arrange the sliced avocado evenly on top of the cottage cheese.
- Then layer the sliced cherry tomatoes over the avocado.
- Follow with the thin cucumber slices for added crunch.
- Sprinkle the chopped fresh chives over the top, along with chili flakes and a drizzle of olive oil.
- Serve immediately while the toast is warm and toppings are fresh.
Notes
Best enjoyed fresh, but components can be stored separately for up to 3 days.
