A nutritious and flavorful toast made with creamy cottage cheese, fresh vegetables, and toasted sourdough bread. Perfect for breakfast or a light meal.


Ingredients

  • 2 thick slices sourdough bread
  • 1 teaspoon olive oil (for toasting)
  • 1 cup full-fat cottage cheese
  • 1 tablespoon olive oil (for blending)
  • Pinch of salt
  • Pinch of black pepper
  • 1 ripe avocado, sliced
  • 6 cherry tomatoes, sliced
  • 1/2 small cucumber, thinly sliced
  • 1 tablespoon fresh chives, chopped
  • Chili flakes (optional)

Instructions

  1. Begin by toasting the thick slices of sourdough bread until golden and crisp.
  2. While the bread is toasting, combine the cottage cheese with olive oil, salt, and black pepper in a blender, and blend until smooth.
  3. Once the bread is toasted, spread the cottage cheese mixture generously on top.
  4. Arrange the sliced avocado evenly on top of the cottage cheese.
  5. Then layer the sliced cherry tomatoes over the avocado.
  6. Follow with the thin cucumber slices for added crunch.
  7. Sprinkle the chopped fresh chives over the top, along with chili flakes and a drizzle of olive oil.
  8. Serve immediately while the toast is warm and toppings are fresh.

Notes

Best enjoyed fresh, but components can be stored separately for up to 3 days.
