- 6 large eggs
- 1 cup cottage cheese
- 1/2 cup milk
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 1/2 cups fresh spinach, chopped
- 1/2 small onion, finely diced
- 1 clove garlic, minced
- 1 tbsp olive oil
- 1/2 cup shredded mozzarella
- 1/4 cup grated Parmesan
Instructions
- Preheat the oven to 375°F (190°C).
- Add olive oil to a skillet over medium heat and sauté the onion for 3-4 minutes until translucent.
- Mix in the minced garlic and cook for 1-2 minutes.
- Add the chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat.
- Whisk the 6 large eggs in a mixing bowl until combined.
- Stir in the cottage cheese and milk until the mixture is smooth.
- Season with salt and black pepper, mixing well.
- Fold the sautéed spinach mixture into the egg mixture until combined.
- Grease a pie dish and pour in the quiche mixture.
- Top with mozzarella and Parmesan cheese.
- Bake for 35-40 minutes until set and golden brown.
- Cool for a few minutes before slicing to serve.
Notes
Great warm or cold; leftovers can be stored in an airtight container for 3-4 days.
