Ingredients

  • 6 large eggs
  • 1 cup cottage cheese
  • 1/2 cup milk
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 1/2 cups fresh spinach, chopped
  • 1/2 small onion, finely diced
  • 1 clove garlic, minced
  • 1 tbsp olive oil
  • 1/2 cup shredded mozzarella
  • 1/4 cup grated Parmesan

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Add olive oil to a skillet over medium heat and sauté the onion for 3-4 minutes until translucent.
  3. Mix in the minced garlic and cook for 1-2 minutes.
  4. Add the chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat.
  5. Whisk the 6 large eggs in a mixing bowl until combined.
  6. Stir in the cottage cheese and milk until the mixture is smooth.
  7. Season with salt and black pepper, mixing well.
  8. Fold the sautéed spinach mixture into the egg mixture until combined.
  9. Grease a pie dish and pour in the quiche mixture.
  10. Top with mozzarella and Parmesan cheese.
  11. Bake for 35-40 minutes until set and golden brown.
  12. Cool for a few minutes before slicing to serve.

Notes

Great warm or cold; leftovers can be stored in an airtight container for 3-4 days.
