A comforting and flavorful one-pot dish combining tender chicken, creamy sauce, and bright lemon flavors.


Ingredients

  • 2 tablespoons olive oil
  • 1 cup finely diced yellow onion
  • 2 teaspoons finely minced garlic
  • 1 large chicken breast or tenders, diced to 1/2-inch pieces
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons unsalted butter
  • 2 tablespoons flour
  • 2 teaspoons Italian seasoning
  • 2 cups chicken broth
  • 21/4 cups whole milk
  • 11/2 cups uncooked orzo pasta
  • 1 cup finely grated Parmesan cheese
  • 3 cups coarsely chopped baby spinach
  • 2 large lemons (1 tbsp zest and 1/4 cup juice)

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Cook the onion until translucent, about 3-4 minutes.
  3. Add the garlic and cook for another minute.
  4. Add the chicken with salt and pepper, cooking until browned, about 5-7 minutes.
  5. Stir in the butter until melted, then add flour and Italian seasoning.
  6. Pour in the chicken broth and milk, stirring well to combine.
  7. Cook the orzo according to package instructions, stirring occasionally.
  8. Add cheese, spinach, lemon zest, and juice, cooking until the spinach wilts.
  9. Taste and adjust seasoning before serving hot.
