A comforting side dish of creamy mashed potatoes blended with rich and nutty roasted garlic, perfect for holidays or family dinners.
Ingredients

- 1 kg Yukon Gold or floury potatoes
- 1 tsp salt for boiling
- 1 whole garlic bulb
- 1 tbsp olive oil
- 4 tbsp unsalted butter
- 1/2 cup warm heavy cream (or milk)
- Salt and freshly cracked black pepper
- Fresh thyme leaves
- Optional: pinch chili flakes
Instructions
- Preheat your oven to 200°C (about 400°F).
- Slice off the top of the garlic bulb and drizzle with olive oil. Wrap it in foil.
- Place the wrapped garlic on a baking tray and roast for about 35 to 40 minutes until soft.
- Peel and chop the potatoes into evenly sized chunks.
- Boil the potato chunks in salted water over high heat until fork-tender, about 15 to 20 minutes.
- Drain the potatoes and let them sit for 2 minutes to remove excess steam.
- Mash the potatoes until smooth without over-mashing.
- Squeeze the roasted garlic cloves into the mashed potatoes.
- Mix in the butter and warm cream until well combined and fluffy.
- Season with salt, pepper, and optional chili flakes.
- Transfer to a serving bowl, drizzle with olive oil, and garnish with thyme leaves.
Notes
Store leftovers in an airtight container in the fridge for up to 3-5 days, or freeze for up to 2 months. Reheat gently on the stove with a splash of milk or cream.
