Juicy chicken seared to perfection in a creamy garlic mushroom sauce—comfort food at its best.
Ingredients
4 boneless chicken thighs or breasts
1 tbsp olive oil
1 tsp garlic powder
½ tsp paprika
½ tsp dried thyme
Salt & black pepper
1 small onion, chopped
3 garlic cloves, minced
1 cup mushrooms, sliced
½ cup chicken broth
½ cup dairy-free or heavy cream
Fresh parsley for garnish
Instructions
1. Season chicken with garlic powder, paprika, thyme, salt, and pepper.
2. Heat oil in a skillet over medium-high heat. Sear chicken until golden, 4–5 minutes per side. Remove and set aside.
3. In the same pan, sauté garlic, onion, and mushrooms until soft.
4. Add chicken broth and simmer for 5 minutes.
5. Stir in cream and return chicken to pan. Cook 5–7 minutes more.
6. Let rest 3 minutes, garnish with parsley, and serve.
Notes
Store leftovers in the fridge for up to 3 days.
To reheat, add a splash of broth and warm gently over low heat.
Perfect over rice, mashed potatoes, or pasta.
