2 large sweet potatoes, peeled and thinly sliced

1 tbsp olive oil

For the creamy sauce:

2 tbsp butter

2 tbsp all-purpose flour

1 ½ cups milk (whole or 2%)

½ cup heavy cream (optional for extra richness)

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

1 tsp garlic powder

½ tsp onion powder

½ tsp dried thyme (or Italian seasoning)

Salt and pepper, to taste

For layering:

2 cups fresh spinach (or baby spinach)

½ cup shredded cheddar cheese (for topping)

¼ cup breadcrumbs (optional, for crunch)


Instructions

1. Preheat the oven to 375°F (190°C). Grease a medium casserole or baking dish with butter or olive oil.

2. Toss thinly sliced sweet potatoes with olive oil, salt, and pepper. Spread half the slices evenly in the prepared dish.

3. In a skillet, lightly sauté spinach over medium heat for 1–2 minutes until just wilted. Remove from heat.

4. In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute.

5. Gradually pour in milk (and cream, if using), whisking until smooth and slightly thickened.

6. Stir in mozzarella, Parmesan, garlic powder, onion powder, thyme, salt, and pepper until creamy and melted.

7. Layer half of the sweet potatoes, add the sautéed spinach, and pour half the sauce over it.

8. Add the remaining sweet potatoes and top with the rest of the sauce. Sprinkle cheddar and breadcrumbs on top if desired.

9. Cover with foil and bake for 25 minutes, then uncover and bake another 15–20 minutes until bubbly and golden.

10. Let rest 10 minutes before serving. Serve warm as a side or vegetarian main dish.
