Description
Delicate cod fillets simmered in a rich, creamy Tuscan sauce with garlic, sun-dried tomatoes, and spinach a restaurant-quality dish that’s ready in minutes.
Ingredients
4 cod fillets (about 6 oz each)
2 tbsp olive oil
2 tbsp butter
3 garlic cloves, minced
1/2 cup sun-dried tomatoes, chopped
1 cup heavy cream
1/2 cup chicken broth
1/2 cup grated Parmesan cheese
2 cups fresh spinach
1 tsp Italian seasoning
Salt and black pepper to taste
Fresh basil or parsley for garnish
Instructions
1. Pat cod fillets dry and season with salt and pepper.
2. Heat olive oil and butter in a large skillet over medium heat.
3. Add cod fillets and cook 3–4 minutes per side until lightly golden and cooked through; remove and set aside.
4. In the same pan, add garlic and sauté until fragrant.
5. Stir in sun-dried tomatoes, heavy cream, chicken broth, Parmesan, and Italian seasoning.
6. Simmer for 3–5 minutes until sauce thickens slightly.
7. Add spinach and cook until wilted.
8. Return cod to the pan, spoon sauce over the fillets, and simmer for 2 more minutes.
9. Garnish with fresh basil or parsley and serve warm.
Notes
Serve with rice, mashed potatoes, or crusty bread to soak up the creamy sauce.
You can use halibut, tilapia, or salmon instead of cod.
Add a pinch of red pepper flakes for a little heat.
