Description
Creamy Tuscan Salmon features perfectly seared salmon fillets in a rich, garlicky Parmesan cream sauce with sun-dried tomatoes and spinach. A restaurant-quality dish ready in just 30 minutes.
Ingredients
For the Salmon:
4 salmon fillets (about 6 oz each), skin-on or off
Salt and pepper, to taste
2 tablespoons olive oil
For the Creamy Tuscan Sauce:
3 cloves garlic, minced
1 cup sun-dried tomatoes (in oil), drained and chopped
3 cups fresh spinach
1 cup heavy cream
1/2 cup grated Parmesan cheese
1 teaspoon Italian seasoning
1/2 teaspoon crushed red pepper flakes (optional)
Fresh basil or parsley, for garnish
Instructions
1. Season salmon fillets on both sides with salt and pepper.
2. Heat olive oil in a large skillet over medium heat.
3. Add salmon fillets and sear for 4–5 minutes per side until golden and cooked through. Remove and set aside.
4. In the same skillet, sauté minced garlic for 30 seconds until fragrant.
5. Add sun-dried tomatoes and cook for 1 minute.
6. Pour in heavy cream, Parmesan cheese, Italian seasoning, and red pepper flakes.
7. Simmer the sauce for 2–3 minutes until slightly thickened.
8. Add spinach and stir until wilted.
9. Return salmon to the skillet and spoon sauce over the top. Simmer for 2–3 minutes more.
10. Garnish with fresh basil or parsley and serve hot.
Notes
Use skinless salmon for easier sauce coverage, or skin-on for crisp texture.
Sun-dried tomatoes in oil add the most flavor; drain them well.
Pair with mashed potatoes, pasta, or crusty bread for a complete meal.
