Description
Crispy Parmesan Roasted Carrots are a simple, delicious side dish with tender roasted carrots coated in a golden, garlicky Parmesan crust. Perfect for weeknight dinners or holiday meals!
Ingredients
1 lb carrots, peeled and cut into sticks
2 tbsp olive oil
1/3 cup grated Parmesan cheese
1 tsp garlic powder
1/2 tsp paprika
1/2 tsp salt
1/4 tsp black pepper
Fresh parsley, chopped (for garnish)
Instructions
1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. In a bowl, toss carrots with olive oil until evenly coated.
3. Add Parmesan, garlic powder, paprika, salt, and pepper. Toss again to coat.
4. Spread carrots in a single layer on the baking sheet.
5. Roast for 22–28 minutes, flipping halfway, until the edges are crispy and the carrots are tender.
6. Garnish with fresh parsley and serve warm.
Notes
For extra crispiness, broil for the last 1–2 minutes.
You can use baby carrots, but increase roasting time by 5–8 minutes.
Add a squeeze of lemon juice for brightness.
