Description
A cozy and nourishing crockpot chicken soup packed with tender chicken, hearty vegetables, and savory herbs the perfect slow-cooked comfort food for any day of the week.
Ingredients
1 1/2 lbs boneless skinless chicken breasts (or thighs)
8 cups low-sodium chicken broth
3 large carrots, sliced
3 celery stalks, sliced
1 medium onion, diced
3 garlic cloves, minced
1 tsp salt
1/2 tsp black pepper
1 tsp dried thyme
1 tsp dried parsley
1 bay leaf
1 cup egg noodles (optional, add near end)
Juice of 1/2 lemon (optional)
Fresh parsley for garnish
Instructions
1. Add chicken, broth, carrots, celery, onion, garlic, salt, pepper, thyme, parsley, and bay leaf to the crockpot.
2. Stir to combine, then cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours until chicken is tender.
3. Remove chicken and shred it with two forks, discarding the bay leaf.
4. If using noodles, add them now and cook for an additional 20–25 minutes on HIGH until tender.
5. Return shredded chicken to the crockpot, stir, and adjust seasoning to taste.
6. Add lemon juice if desired for brightness.
7. Serve warm, garnished with fresh parsley.
Notes
Use chicken thighs for extra flavor and tenderness.
Add potatoes or rice instead of noodles for variation.
Freezes well — cool completely before storing in airtight containers for up to 3 months.
