Description

Sweet, tangy Crockpot Cranberry Apricot Chicken with a glossy sauce made from cranberry, apricot, and savory onion flavor. Tender, juicy, and perfect over rice or mashed potatoes!


Ingredients

23 lbs chicken breasts or thighs

1 can (14 oz) whole-berry cranberry sauce

1 cup apricot preserves

1 packet (1 oz) onion soup mix

2 tbsp Dijon mustard

1 tbsp apple cider vinegar

1 tbsp soy sauce or coconut aminos

1/2 cup chicken broth

1/2 tsp black pepper

1/2 tsp garlic powder

1/4 tsp crushed red pepper flakes (optional)

Fresh parsley, for garnish


Instructions

1. Place chicken in the bottom of the crockpot.

2. Whisk together cranberry sauce, apricot preserves, onion soup mix, Dijon mustard, vinegar, soy sauce, broth, pepper, garlic powder, and red pepper flakes.

3. Pour the sauce mixture evenly over the chicken.

4. Cover and cook on LOW for 5–6 hours or HIGH for 3–4 hours.

5. Remove the chicken and shred or slice it.

6. Return chicken to the crockpot and stir to coat.

7. Let simmer for 10 more minutes to thicken.

8. Garnish with parsley and serve over rice or mashed potatoes.

Notes

Chicken thighs remain more tender than breasts.

Add 1–2 tbsp orange juice for brightness.

Thicken the sauce on the stovetop if desired.

This recipe makes an excellent freezer meal.
