Tender, melt-in-your-mouth Crockpot French Onion Pot Roast slow-cooked with caramelized onions, herbs, broth, and rich savory flavor. The perfect comfort dinner!
Ingredients
3–4 lb chuck roast
3 large onions, thinly sliced
4 cloves garlic, minced
2 tbsp butter
1 tbsp olive oil
1 tbsp Worcestershire sauce
1 packet (1 oz) French onion soup mix
2 cups beef broth
1 cup dry white wine (optional)
1 tsp dried thyme
1 tsp dried rosemary
1 tsp salt
1 tsp black pepper
3 tbsp cornstarch + 3 tbsp water (optional)
Fresh parsley (optional)
Instructions
1. Heat a skillet over medium-high heat with butter and olive oil.
2. Sear the chuck roast on all sides until browned; transfer to crockpot.
3. Add onions to the skillet and cook until softened and lightly caramelized.
4. Add garlic and cook 1 minute, then deglaze with white wine.
5. Transfer onions and liquid to the crockpot.
6. Add soup mix, Worcestershire sauce, thyme, rosemary, salt, and pepper.
7. Pour beef broth over the roast.
8. Cook on LOW for 8–10 hours or HIGH for 4–5 hours.
9. Remove roast, shred or slice, and return to the crockpot.
10. If thicker gravy is desired, stir in cornstarch slurry and cook 10–15 minutes on HIGH.
11. Serve hot with mashed potatoes, rice, or crusty bread.
Notes
Chuck roast becomes perfectly tender in the crockpot.
White wine can be replaced with beef broth.
Add mushrooms for deeper flavor.
A spoonful of Dijon mustard enhances the richness.
