Description
Tender, juicy Crockpot Pork Roast cooked with hearty vegetables, herbs, and garlic. The perfect comfort food dinner!
Ingredients
3–4 lb pork shoulder or pork butt
1 tbsp olive oil
1 tsp salt
1 tsp black pepper
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
1/2 tsp dried thyme
1/2 tsp dried rosemary
1 onion, sliced
4 cloves garlic, minced
4 large carrots, chopped
4 potatoes, chopped
1 cup chicken broth
2 tbsp Worcestershire sauce
1 tbsp soy sauce (optional)
1 tbsp cornstarch + 1 tbsp water (optional for gravy)
Instructions
1. Season pork with salt, pepper, garlic powder, onion powder, paprika, thyme, and rosemary.
2. Optional: Sear pork in olive oil for 3–4 minutes per side.
3. Place onion, garlic, carrots, and potatoes in the crockpot.
4. Set pork roast on top of the vegetables.
5. Pour in chicken broth, Worcestershire sauce, and soy sauce if using.
6. Cook on LOW for 8–10 hours or HIGH for 4–5 hours.
7. Remove pork and shred or slice.
8. For gravy, whisk cornstarch slurry into juices and cook on HIGH for 5–10 minutes until thickened.
9. Serve pork with vegetables and gravy.
Notes
Pork shoulder or butt gives the best tenderness.
Add mushrooms or celery if desired.
For a slightly sweeter flavor, add brown sugar or apple cider.
Leftovers are great in sandwiches or tacos.
